Orb Weaver Spider (R.J. Lang)
As with the Hercules Beetle this is made from one square of paper. In attempting the various models I have found that some are far simpler than others - one day I might just manage some of the more complex ones, or find the patience (and a big enough piece of paper) to complete the 159 step scorpion...
